Whether and how easy it is to change a term of the contract in the middle of the project depends upon: (1) whether the other party to the contract agrees with you that the date of substantial completion in the contract is in fact a mistake rather than what the parties agreed to; and (2) if the other party disagrees, how good is your evidence that another date was supposed to be the date of substantial completion and the date currently in the contract is in fact a mistake.
The question is where I change the information in the documents you have. I have done additional work for the customer so the date of WORK PERFORMED changed, AND I mistakenly input a date of substantial completion as there is no date as the project was never completed

I don't have the documents so I can't answer that question. And if the document is a contract, it is unlikely you can just change the terms or the completion date unilaterally. You are going to want to make sure that you and the other party to the contract are on the same page about the information being changed. If you are not, it may cause a very significant problem.
